Can People with Diabetes Eat Vermicelli? Here’s What Doctors Say

Hello everyone! I’m Dr. Fu, a licensed physician with over 20 years of experience in weight management and medical nutrition therapy. I often get asked whether people with diabetes can eat vermicelli, so let’s break it down.

The foundation of diabetes treatment is blood sugar control, and diet plays a crucial role in this process. Whether a particular food is suitable for someone with diabetes depends largely on its effect on blood glucose levels.

Vermicelli is typically made from sweet potato starch, potato starch, or various bean starches. Its main nutrient is carbohydrates, with very little protein, fat, or other nutrients. Compared with the starch in white rice or refined flour, starch from tubers and beans has a more complex structure and digests more slowly.

On top of that, the processing methods used to make vermicelli further slow down carbohydrate breakdown. As a result, vermicelli has a much lower impact on blood sugar compared to white rice — the glycemic index (GI) of white rice is about 88, while vermicelli is around 35. This means that, in moderation, people with diabetes can enjoy vermicelli without major blood sugar spikes.

However, “in moderation” is key. While vermicelli is gentler on blood glucose, it is still a carbohydrate-rich food. Eating too much can still raise blood sugar levels. If you have vermicelli in a meal, it’s best to reduce other high-carb foods accordingly to maintain your daily carbohydrate balance.

It’s also not advisable to eat vermicelli every day. Its nutrient profile is quite limited — mostly carbs with very little protein, fiber, vitamins, or minerals. A healthy diabetes-friendly diet should include more nutrient-dense, whole-grain staples such as brown rice, buckwheat, oats, quinoa, millet, corn, and mixed beans. These options provide a broader range of nutrients while still supporting stable blood sugar.

As a physician, my advice is simple: vermicelli can be part of a diabetes-friendly diet, but it should be enjoyed in moderation and balanced with other nutrient-rich foods. Healthy eating is about variety, balance, and mindful portions.
